This tasty snack has been popular in Spain for many years, especially in summer, thanks to its refreshing flavour. At Ebla (Calle Martín de los Heros, 7), they serve hummus of the highest quality, which you can scoop up with a delicious fine pita bread. This restaurant was one of the first Arabic restaurants in Madrid and it is the ideal place to have a snack before going to see a film, since it’s located right in front of the so-called Walk of Fame, next to the Golem, Princesa and Renoir cinemas.

As its name indicates, La Hummusería specialises in hummus and offers many different variations of this tasty dish. Located between Chueca and Malasaña (Calle Hernán Cortés, 8), this restaurant opened in 2015 and is owned by a couple of Israeli chefs. Despite focusing on hummus, it also serves many other different dishes, most of them vegetarian. The mushroom hummus is one of the most popular choices, which goes perfectly with a homemade lemonade that will make you feel in the heart of Tel Aviv.

La Cocina del Desierto, also in Chueca (Calle Barbieri, 1) takes us on a journey to the world of Bedouins, to the African Maghreb, with its food full of flavour and character. Here, you can enjoy hummus but also similar dishes such as the cream of aubergine, which is great to enjoy on a hot day. After, try the delicious chicken tagine with figs and honey or the lamb couscous for the reasonable price of 8 euros. This restaurant is very popular so it’s best if you book your table in advance.

We conclude this brief hummus route at La Quietud Tiyoweh (Calle San Pedro, 22). Located in the Las Letras district, this vegetarian restaurant has plenty of character and a “transforming” vocation, offering hummus for 7 euros accompanied by wholemeal cereal bread and other delicacies that can be found on its short but intense menu.
